This bottle of Glenrothes — “Glen Rothes” per this label — was independently bottled by Signatory as a part of its Un-Chillfiltered Assortment in 2021, after 11 years in a hogshead. It’s a single barrel choice “specifically chosen for Spec’s Texas,” with 252 bottles launched at cask energy.
It’s basically a traditional illustration of Speyside — although a bit powerful to totally recognize at bottle energy, over 65% abv. Heavy notes of cereal and heather on the nostril threaten to segue to restrained components of baking spice earlier than taking a step again, revealing a darker ingredient of tar and scorched barley. The palate feels pulled in those self same instructions — the freshness of the grain unraveling within the face of notes of charred wooden, creosote, and over-toasted cloves.
