Alice: The Rocks has a brand new cocktail bar that channels classic glamour

“We’ve got had our sights set on a high-end cocktail bar for a while, one that attracts inspiration from the world’s finest bars and the meals choices of our personal premium eating places, Rockpool Bar & Grill and Spice Temple,” Pash mentioned.

Over thirty French Champagnes grace the drinks checklist, alongside a powerful contingent of Australian and European wines, with illustration of biodynamic, natural, vegan and preservative-free kinds. The bar menu includes Sydney’s most interesting snacks, that are designed to accompany Alice’s subtle sips. The menu takes inspiration from sister venues Rockpool Bar & Grill and Spice Temple.

A Caviar service served with Tater Tots and Crème Fraiche strikes a first-class word. Irresistible ‘Uncooked and Sliced’ dishes embody Scallop Crudo with Gin, Olive Oil and Burnt Orange; Beef Carpaccio with Parmesan, Horseradish Cream and Capers; and Jamon with Pickled Cauliflower.

Pair a cocktail or two with small plates, similar to Hen Liver Parfait Profiteroles, Fried Hen with Sichuan Salt and D.C.P Mayonnaise; Smoked Trout Dip with Byron Bay Seeded Crackers; Beef Empanadas; and Buffalo Mozzarella with Grilled Pear and Vincotto.

Hunter St. Hospitality Chief Government Officer Thomas Pash mentioned he was thrilled that the group’s plan to open a premium cocktail bar was lastly coming to fruition.
