Celebrated for its wines, ciders, and dishes of provenance, Spain’s Basque Nation now affords a scrumptious new product: Ama Brewery’s new low-alcohol line of bottle-fermented kombuchas dubbed “pét-nat teas.” As a daily kombucha drinker and preliminary pét-nat tea skeptic, I used to be delightfully shocked by Ama’s new choices. They’re produced with thoughtfully sourced teas not typically utilized in kombucha. Suppose: milk oolong from Taiwan and tea varietals from Malawi.
Take the BAT, for instance, made with Yabukita selection sencha from Japan. The tea leaves obtain solely a light-weight steam.
