Makes 1 Cocktail

2-3 slices recent ginger
1/4 ounce easy syrup
2 ounces Pineapple Infused Jamaican Rum (recipe follows)*
3/4 ounces Amaro di Angostura
3/4 ounce recent lime juice
2-3 ounces Zeffer Cider Co. Cidre Demi-Sec
Garnish: lime wedge and candied ginger
Add the ginger slices and easy syrup to a mixing glass and muddle effectively to launch the
flavors of the ginger. Add within the infused rum, amaro, and lime juice. Fill with ice, cap,
and shake vigorously to mix. Pressure into an ice-filled Collins glass and high with
cider. Garnish with a lime wedge and candied ginger.
*Pineapple Infused Jamaican Rum
Makes rather less than a 750ml bottle of infused rum
1 Bottle (750ml) Jamaican Rum
1/2 recent pineapple minimize into cubes
Mix all elements in a clear jar and steep for 48 hours. Pressure liquid right into a clear
bottle and reserve pineapple for an additional use.
