Since opening in August 2023, Tucano’s has provided its tiki-inspired menu to hundreds of friends (and a large Sydney Bar Week Tiki Face-Off social gathering). They’ve not too long ago launched a model new drinks menu and this one from Bec Bayley is a scrumptious sherry-forward strawberry refresher that can fly over the bar. 7.5ml amontillado sherry
20ml clarified strawberry
15ml sugar
5ml 10% malic answer
Garnish with isomalt dome dusted with strawberry sugar and sesame seeds
