Sante Adarius Rustic Ales – Saison Bernice – 750 mL bottle, unknown classic, served in a ten oz stemmed tasting glass. 6.5% abv.

The hay-day of American wild ale manufacturing has come and gone; as soon as a bankable class misplaced its place on retailer cabinets and within the hearts of craft beer producers. Whereas some gamers simply shifted focus away from their barrel warehouse, others needed to rewrite total enterprise plans. Fortunately, breweries like Sante Adarius of Capitola CA are nonetheless turning out implausible wild ale blends, corresponding to Saison Bernice.

Look: Excessive readability and burnt orange shade. A rocky white head retains for a minute within the glass earlier than dissipating.

Aroma: Peach gummy rings, strawberry Sunburst sweet, slight diesel. Wisps of oak.

Taste: Medium acidity with a contact of acetic acid chew, fairly nice. The flavour follows the aroma effectively, with a bit extra lemon Starburst than strawberry (what can I say, I ate loads of them as a child). I additionally get hints of Earl Gray tea and stonefruit, that are frequent taste items in wild ales. Medium minus on the carbonation, which I want. Extra carbonation would mix with the oak tannin, resulting in a harsh swallow.

Total: I don’t bear in mind exactly once I received this bottle, however I bought it pre-pandemic from the brewery direct. Wild ales is usually a little bit of a time capsule; locked up behind glass and steel, they’ll evolve from their authentic place. What’s fascinating about Bernice is its viability for a number of years. The mix and execution after bottle conditioning, sustaining a balanced acidity and brilliant fruit flavors, actually reveals off the ability set of Sante Adarius brewers.
