IMPERIAL BEACH, California – College students from Southwestern Faculty’s Fermentation Science Program have collaborated withNOVO Brazil Brewing Firm to create Tzunúm, an Australian Pale Ale that’s out there on draft solely on the brewery’s Imperial Seashore location.
Tzunúm marks the primary time college students of this system have brewed outdoors of the classroom and in an expert brewery. This system began in Spring 2018 with a lecture class, and the primary brewing lab was held in Fall 2019 with a small, five-gallon system.
Tzunúm, which is Mayan for hummingbird, was named by the scholars for its lightness and summer-y options. It has a lightweight golden coloration, regular white head, and a 5.5% alcohol by quantity (ABV). The beer is barely hazy, and it includes a citrus and recent lime zest from a single hop of Wakatu.
