Three wee Speyburn that do not burn
|
Certainly we’re actually again, however let’s first do just a few brief warm-up periods earlier than we begin to sort out higher-echelon drams once more, after our fairly lengthy holidays (and the heatwaves, and sore throats due to air con gone wild, COVID once more, and many others.) Plus, as you realize, tasting is a sport (yeah, yeah) and any sports activities want some coaching.

Fiddler’s in Drumnadrochit.
The climate has not been photoshopped. |

Speyburn ‘Hopkins Reserve’ (46%, OB, Journey Retail, 1l, +/-2020)
A wee NAS bottled solely for Fiddler’s in Drumnadrochit. A sure Jon Birch, proprietor of that marvellous place, informed our reporter, ‘Aye, I selected it as a result of I may get delivered 2 hundred and fifty bottles for the value of 1 bottle of Port Ellen, my first alternative. We’re pouring it with tarte flambéed au haggis’. Let’s examine if that was a sound alternative… Color: white wine. Nostril: sourdough and savagnin du Jura, a little bit mustard, moist rocks and seashells, fairly some carbon mud, spent engine oil, then pear juice and a wee barnyardy aspect. It is fairly mashy, in reality. Mouth: mashed turnips with some dough, grist, a contact of ‘inexperienced smoke’ and a few apple and pear peel. Good physique, the 46% certain assist. End: quite lengthy, as gristy and doughy, with touches of zests and at all times this sense of inexperienced pear. Some sawdust within the aftertaste. Feedback: a barely wild, sincere, loyal dram that is notably near Mom Nature. Glad to see that at 25€ a bottle (at some locations), it is nonetheless an excellent puncher.

Let’s transfer to an larger league…

Speyburn 18 yo (46%, OB, +/-2022)
We have tried a batch from two years in the past that had been glorious (WF 86). In idea, this ought to be fairly ‘bis repetita placent’. Color: gentle amber. Nostril: superior certainly, deeply malty and bready at first (recent apricot bread, recent panettone), then on dried figs and only a family-box of Turkish delights. Within the background, as soon as once more a little bit candy mustard, grist, bitter bread, some older pipe tobacco, and a wee glass of candy petit manseng wine. Assume pacherenc! Mouth: drier, a tad funkier (assume Fettercairn), beginning spicy and form of bitter and bitter, as if we have been chewing tobacco. Massive cinnamon, white pepper, parsley, then pad Thai, bitter cordials, turmeric, oak… End: sweeter, with loads of marmalade. Feedback: I am re-reding my older notes as we communicate and can’t not agree with what I had written (that is lame, S.), it is quite in the identical cluster as Fettercairn and Glenturret. Vive la distinction!

And a wee indie for good measure…

|
Speyburn 12 yo (55.2%, Morisco Spirits, first fill bourbon, +/-2021)
This one straight from Italy, the place they’re very cautious with what they put into their mouths (a well-liked saying). Color: pale white wine. Nostril: identical ballpark, simply extra ‘pure’, nearer to the distillate, that’s to say even fuller of doughs, flours, breads, porridge, brake mud, soot, cider pears… With only a tiny sweeter coating. Barley syrup, most likely. With water: limoncello and chalk coming to the entrance. Works in white wine, so works in whisky too. Mouth (neat): fairly deviant, in a great way. A sense of smoked wine gums, ought to that exist, absolutely lemon drops, banana foam coated with soot… I suppose you get the image. With water: wee plastic-like touches (keep in mind, Speyburn, Fettercairn, Glenturret) however that is an asset right here. End: quite lengthy, a little bit petroly. Extra good plastic, rubber, limoncello. Feedback: singular whisky that likes its water.
