Tormore 27 yo 1995/2022 (48.3%, WhiskySponge, for LMDW, Assortment Antipode, refill hogshead, 136 bottles)
On the label, an anthropomorphic sponge mendacity on the bottom whereas dreaming of flowers. An excessive amount of Tormore, in all probability, except that will have been ‘one thing else’. Color: gold. Nostril: flowers maybe (mullein? Honeysuckle? Freesia? Orange blossom?), likely honeys, and fruits for certain. Pink bananas, juicy sultanas, prickly pears, rambutans, plums, melons massive time, papayas… I am additionally discovering just a few droplets of pinot gris. Alsatian pinot gris, naturally. Mouth: feels stronger than 48.3, with luggage of orchard fruits and touches of caramel and stout. I am certain it could take water with ease and pleasure… With water: and it does. Moist marzipan (with kirschwasser, in fact) plus melons ala Bruichladdich and peaches ala Ardmore. Fantastic ‘western’ fruitiness. Zwetschke. End: medium, fruity and doughy. Brioche stuffed with candied fruits. Feedback: bordering stardom, an ideal bridge between fruits and doughs. Who mentioned ‘so, panettone?’

Tormore 29 yo 1993/2022 (54.5%, Gordon & MacPhail, Connoisseurs Alternative, first fill sherry butt, cask #5053, 554 bottles)
It is to be remembered that G&M are filling their very own casks. Color: full gold. Nostril: way more sherry right here, clearly, so extra roasted nuts, walnuts, espresso, maybe just a little gunpowder too, struck matches, bitter oranges… With water: soy sauce, recreation, leather-based, burnt caramel, umami sauce (litres of that), soot… Mouth (neat): heavy flinty sherry, orange zests, salted liquorice, virtually some tar, leather-based, some mustard sauce, barely overly infused tea, dry Madeira, bits of tobacco… It needs to be mentioned that it isn’t simple to return after the very pure WhiskySponge with this sort of leafy and faintly s******y sherry. With water: on the frontiers. End: lengthy and intensely umami-y, however with a sweeter aftertaste on candied grapefruits. Feedback: some components are sensible, others are maybe harder. A method that is slowly parting in most components of the whisky world (simply not in Mittelleuropa, ha!)
