We love good casks, particularly the large oak butts we take supply of from Bodegas José y Miguel Martin in Huelva, Spain. These 500 litre oak casks have been ‘seasoned’ with Oloroso, a fortified wine that’s made in Jerez and Montilla-Moriles. Oloroso wines are usually dry, sturdy, and full-bodied of their character and normally have a darkish and nutty flavour. These then assist impart notes of dried fruits and spicy oak to whisky when the casks are re-used to mature new-make spirit. The dimensions of those barrels are fairly one thing to behold and take a little bit of effort to roll however Rebecca appears to have discovered the knack!
